Chili’s Breakfast Fundraiser

Chili’s Breakfast Fundraiser is for  the kids from Weld Central Middle School going to New York in June. All of the kids would love your support.

When:  Saturday, Februayr 16th 2013

Where:  Chili’s ~ Prairie Center ~ Brighton, CO

Time:  7:00 am – 10:oo am

Cost:  Adults $10.o0 (12 and older)

Children  $5.00  (3-11)

 

Breakfast will be buffet style, all you can eat, and includes:

  • Pancakes
  • Scrambled Eggs
  • Green Chili & Tortillas
  • Bacon & Sausage Links
  • Fried Potoatoes
  • Fresh Fruit
  • Coffee & OJ

Tickets can be purchased ahead, or at the door. If you would like to pre-purchase tickets let me know and I’ll provide the teachers contact info.

Week of 2/3 – 2/9 ~ 2013 Blogging Journal

This weeks topic for 2013 blogging journal is ~ what is my most prized family memento and why? This is very easy because I have many family mementos.

  • A Dutch Lady Cookie jar – My grandparents had this cookie jar for as long as I can remember. Every time Vickie and I went to our grandpa & grandma’s house we would get  cookies out of this cookie jar. Sometimes they would be homemade chocolate chip cookies, and sometimes they would be store-bought cookies.
  • A Dried Flower Framed Picture – this was a Mother’s Day gift from my girls. They made it all by themselves. They cut and sort of dried flowers and then put them into a large picture frame with “Happy Mother’s Day” on the bottom.
  • Family Photos – As my grandma aged, and we went to visit she would always ask – what do you want when I die – PHOTOS!!! I said every time  she asked, and we would go through photos and I would take a few more home each time. I don’t know what happened to all the photos she had when she passed, but I am sure glad I took what I could when she was alive!
  • My grandma’s infant cereal bowl – My grandma left her infant cereal bowl to Jennifer, but Jennifer felt that as she moved a few times, the cereal bowl would be safer at my house. So for now I am keeping it for her. That cereal bowl is about 90 years old by now.
  • My grandma left a set of drinking glasses to Tiffany. She received them for her 25th wedding anniversary. Yes, I have these also for safe keeping.
  • John was pretty little when grandma was put into an assisted living facility so he didn’t get to spend too much time with his great grandma, but I did pick out a gravy bowl for him that was my great grandma’s. I don’t remember too much about her, but it is nice to have a piece of her favorite things.

I told you this was going to be a long post, and I wasn’t kidding.  =) Here is a few more things that are my prized family mementos. When my mother passed almost 3 years ago I received a few more prized mementos. Here is a few of them.

  • A silver wedding band that she wore after her divorce from my real dad, and my adopted dad. At that time it wasn’t proper for a single mother with two small children.
  • My mother left me a diamond & sapphire ring, which I wear every day.
  • My mother left Vickie and I our grandma’s wedding ring. I kept the wedding band and Vickie has the engagement ring. My half of my grandmas ring is right between my wedding band and engagement ring.
  • When Mark and I were married, Mark’s mother gave him his grandmother’s wedding band to give to me when we got married, which at the time was about 100 years old. What a lucky girl I am!

Football Whoopie Pies – these are just adorable, and sure to be a hit at your Super Bowl Party!

Mini strawberry footballs recipe

Serves about 12

Ingredients:

  • 12 fresh strawberries
  • 1-1/2 cups semisweet chocolate chips
  • 1 tablespoon butter
  • White cookie icing gel
  • Parchment paper

Directions:

  1. Heat chocolate chips and butter in a shallow bowl in the microwave until melted, about two minutes. Be sure to stir the mixture at the one minute mark, to ensure the chocolate doesn’t overheat. Remove.
  2. Grab each strawberry by the leaves and dip into the melted chocolate, holding it over the mug to drip off any excess. Place on a piece of parchment paper. Repeat until all strawberries have been covered. Let stand until chocolate hardens, about 20 minutes.
  3. Grab your white icing gel and draw on lines to create a football. Chill for at least an hour so that chocolates harden. Best serve chilled.

Pizza Dip

A layered, hot cheesy dip with all of the great flavours of pizza including pizza sauce, cheese, pepperoni, olives and green peppers.

Servings: makes 4 servings
Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes

Ingredients
  • 4 ounces cream cheese, room temperature
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup mozzarella, grated
  • 1/4 cup parmigiano reggiano (parmesan), grated
  • 1 cup pizza sauce
  • 1/2 cup mozzarella, shredded/grated
  • 1/4 cup parmigiano reggiano (parmesan), grated
  • 2 ounces pepperoni, sliced
  • 2 tablespoons green pepper, sliced
  • 2 tablespoons black olives, sliced
Directions
  1. Mix the cream cheese, sour cream mayonnaise, mozzarella and parmigiano reggiano and spread it across the bottom of a pie plate.
  2. Spread the pizza sauce on top and sprinkle on the cheese, pepperoni, green pepper and olives.
  3. Bake in a preheated 350F oven until the sides are bubbling and the cheese cheese has melted and turned golden brown on top, about 20 minutes.

  • 1/2 (10 ounce) package frozen spinach, thawed, drained and coarsely chopped
  • 1 (14 ounce) can artichoke hearts, drained and coarsely chopped
  • 4 ounces cream cheese, room temperature
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 clove garlic, grated
  • 1/2 teaspoon chili sauce (optional)
  • 1/4 cup grated parmigiano reggiano (parmesan), grated
  • 1/4 cup mozzarella, shredded
Directions
  1. Mix everything and pour it into a baking dish.
  2. Bake in a preheated 350F oven until the sides are bubbling and the cheese cheese has melted and turned golden brown on top, about 20-30 minutes.

Lunchbox Cupboard

This is an extremely cool idea – Lunchbox Cupboard: the kids pack their lunches… pick one from each drawer (fruit, granola bars, snacks, desserts, drinks) The parent chooses what goes in the drawer, but the child learns to make their own choice of what to eat.
